Biscottini di Pasqua - Easter sugar cookies
150 gr burro morbido
150 gr zucchero semolato
1 cucchiaino lievito in polvere
1 cucchiaino estratto di vaniglia
260 gr farina 00
Stampi a forma ovale
Easter sugar cookies
2/3 cups of butter, softened
3/4 cups of sugar
1 teaspoon of baking powder
1 teaspoon pure vanilla extract
2 cups of all-purpose flour
Dash of salt
1/4 warm water
Beat in egg and vanilla.
Preheat overn to 375° F
On a lightly floured surface roll a portion of the dough at a time until 1/4 inch thick
Cut with oval and other shaped cookie cutters .
Place cutouts on an ungreased cookie sheet.
Bake for 8 to 10 minutes or until edges are lightly browned.
With a spatula, transfer cookies to a wire rack and cool.
*Combine powdered/icing sugar and meringue powder .
Add water and beat with electric mixer on low speed until spreading consistency.
If too stiff , add 1 tablespoon at a time of warm water.
Divide in 4 small bowls and tint with desidered colors
I also added some sprinkles to some of them
To make the hearts: spread colored icing on the cookie, then add a very small drop of another color and go through it with a toothpick
